Double Vanilla Coconut Milk Creamer

Are you a fan of flavoring your coffee or tea with creamer? Having grown up in a rural, agrarian immigrant community, I grew up with milk being the only addiditve to coffee or tea. When I went away to college and began to interact on a daily basis with those outside of my community and those with different culinary traditions, I learned that one can purchase various types of creamers and many had added flavors.

Taking a look at the list of ingredients of such a vanilla flavored creamer reveals a rather long list of ingredients. The latter are not necessarily a good match for those concered with nutritional density and / or consuming foods they can pronounce. Here is the list for a popular brand’s vanilla creamer version:

WATER, CANE SUGAR, PALM OIL, CONTAINS 2% OR LESS OF: SODIUM CASEINATE* (A MILK DERIVATIVE), DIPOTASSIUM PHOSPHATE, CARRAGEENAN, MONO AND DIGLYCERIDES, NATURAL & ARTIFICIAL FLAVORS, SODIUM STEAROYL LACTYLATE, SALT.

As you can see, not all the ingredients are clear (for example, natural and artificial flavors are used). One has concerns as a carcinigen (carrageenan) and another is a top 9 allergen.

As the wife of a coffee aficionado, the mother of tea latte drinkers and of dairy free kiddos, I set out to create a vanilla creamer we could all enjoy and that I could feel was safe for a mixed allergy household. The result is this Double Vanilla Coconut Milk Creamer featuring Singing Dog Vanilla. It is not only vegan, but also paleo as well as free from corn, dairy, egg, gluten, tree nuts, peanuts and soy.

When most of us think of Hot Chocolate or Hot Cocao, we think of the brown hued beverage made with cacao powder. But what if we use the cacao butter rather than the powder? That is exactly what I did for this recipe & there is the option to use white chocolate chips if you have a safe-for-you-option. This is a rich and filling beverage and can yield anywhere from 2 large servnigs up to 6 smaller servings. It does contain coconut.

For an added layer of flavor, experiment with almond extract for Vanilla Amaretto, peppermint extract for Vanilla Mint, or ground cinnamon or Chai Spaice Mix for a autumnal vanilla variation.

The Recipe

Ingredients

Method

  1. Mix all ingredients in a bowl until smooth & free from lumps.

  2. Enjoy with coffee, in a green tea Matcha latté or hot cacao.

  3. Store any leftovers in an airtight glass container / jar up to 4 days in the refrigerator.
