Breakfast for Dessert?

So many of us have breakfast for dinner because it is an easy way to prepare a meal at the end of the day, but many frown upon the idea of breakfast for dessert. This does not have to be the case because there are so many ways to enjoy breakfast in a dessert kind of way.

I know, I know, I am always talking about enjoying foods that are nutrionally dense, so how does dessert fit into breakfast? By turning plain waffles into chocolate flavored waffles that are topped with blueberries and homemade whipped coconut cream. This is exactly how I enjoy these Bare Life Chocolate Waffles making them a berries and cream delight. Don’t like blueberries? Try your favorite fruit or a safe-for-you nut or seed butter spread instead. How about a faux “peanut” butter cup sandwhich to start your day or pack it for your little one(s) for lunch? Now that is what I call a Mom-win!

Bare Life Hot Chocolate Waffles

Yield: vary according to waffle maker

Ingredients

  • 1 cup cassava flour

  • 6 - 8 Tbsp. Bare Life

  • 1 ½ tsp. (paleo) baking powder

  • ½ tsp. sea salt

  • ½ tsp. vanilla extract, optional

  • 1 ¼ cup coconut milk

  • ¼ cup coconut oil or palm shortening, melted

  • 1 egg, room temperature

  • whipped coconut cream, optional as topping

Method

  1. Whisk together dry ingredients in a medium bowl to combine.

  2. Whisk together wet ingredients in a 2 or 4-cup glass measuring cup.

  3. Pour wet ingredients into dry ingredients stirring until incorporated.

  4. Warm waffle iron & follow manufacturer’s directions to cook waffles.

  5. Alternatively, cook as pancakes on skillet over medium heat.

  6. Enjoy warm or freeze to enjoy later.

Notes

*For vegan waffles, you can replace egg with ¼ cup applesauce, but the texture will be less fluffy & may be a little gummy.

**Serve topped with whipped coconut cream, blueberries and Bare Life sprinkled as a garnish if desired. These are also excellent with maple syrup.
