5-Ingredient Chocolate Chip Cookie Dough Balls

Cookies for Breakfast?

Who says you can't have cookies for breakfast? Not this Mama provided they are made with healthy, clean ingredients like those in these Cookie Dough Balls.

I often make my Easy Peasy Energy Balls for breakfast, but sometimes I just want to make an energy ball that is simple, yet complex in flavor while also feeling like a decadent treat. For layers of rich flavors, I recommend the flour blend in parenthesis. For a larger crowd, double the recipe.

5 Ingredient Choc Chip Cookie Dough Balls

(Yields 16 balls)

Ingredients

  • 1 ½ cups almond flour  (or 1 ¼ almond flour & ¼ c flax meal)

  • 2 Medjool dates, pitted

  • ¼ tsp. sea salt

  • ¼ cup coconut oil*

  • chocolate chips or cacao nibs

Optional

  • ½ Tbsp. Vanilla extract 

  • ½ Tbsp. ground cinnamon

  • ½ - 1 Tbsp. gelatin or protein powder

  • 1 - 2 Tbsp. sunflower, chia or hemp seeds

Method

  1. Place flour(s), dates & salt in food processor.

  2. Pulse to combine & chop dates.

  3. Add oil processing until a dough begins to form.

  4. Add half chocolate chips or nibs procesings until dough is a ball*.

  5. Gather dough ball.

  6. Divide in half & then into 16 balls & roll (or use a spoon to form balls of desired size).

  7. Add remaining chocolate chips / nibs to balls as desired. Enjoy.

*Note: you may need to adjust oil amount by adding 1 tsp. at a time or you may wish instead to add water.
