At the GFAF Expo in July, I had the pleasure of not only tasting Zego Snack Bars, but of also tasting Zego Mix-Ins as well as meeting Colleen of Zego Snacks. As I tasted the Mix-Ins, I thought of my Seedy Porridge recipe and how the Mini-Foodies enjoy it so much. A light bulb went on in my head and I thought that Zego Mix-Ins would make for an easy way to have a gluten-free, corn-free breakfast that is also vegan AND paleo-friendly. In the U.S., cereal or oatmeal tend to be breakfast staples, but those of us in the gluten-free and / or corn-free community often do not have the ease a quick breakfast consisting of pouring a cereal and a milk into a bowl or making overnight oats for example. We also often find ourselves saying, "I don't know what to eat for breakfast."

I have a yummy and quick solution to this conundrum: Zego Mix-Ins Porridge! Not only is it super tasty, but it is also quick and versatile.  Below you will find a few variations. The first is "Zego Mix-Ins Porridge" and is a good option for someone who wants a simple pour, blend and go option. Please note that it is the sweetest option of all, so If you prefer a less sweet porridge, do use the "Zego Mix-Ins Base Porridge" which adds a little more work while remaining quick, more economical and less sweet. The latter along with the "50/50 Base & Very Berry Porridge" happens to be the Mini-Foodies favorite of all the variations. With the "Very Berry Porridge", blueberries are blended with the porridge.

Zego Mix-Ins come in 2 flavors:

Cranberry & Apple Cinnamon

Before moving on to the recipes, I would like to thank Colleen & Zego for her generosity in providing me with Zego Mix-Ins in order to develop these Porridge recipes. Check out and try one or all the variations and let me know what you think in the comments.

Zego Mix-Ins Porridge

Cranberry

Zego Mix-Ins Porridge

Serves 2          Serves 4 Ingredient

1 cup                1 pkg.  Zego Mix-Ins Apple Cinnamon or Cranberry

3 Tbsp.             6 Tbsp.  unsweetened, shredded coconut

1/8 - ¼ tsp.      ¼- ½ tsp.  sea salt

(1 tsp.               2 tsp.  ground cinnamon, optional with Apple Cinnamon Mix-Ins)

¾ - 1 cup           1 ¾ - 2 cups boiling water

Method

  1. Place all ingredients except water in high speed blender.

  2. Blend until a course flour consistency, 10 second button with Blendtec.

  3. Add water.

  4. Blend until fully incorporated followed by an additional 25-30 seconds, the “Smoothie” and “Whole Juice” settings work perfectly on the Blendtec.

  5. Pour into bowls.

  6. Top with additional seeds, dried fruit, applesauce or cinnamon, if using, as desired. Enjoy!

Zego Mix-Ins Base Porridge

Serves 4

Ingredients

  • 1 cup Zego Mix-In Apple Cinnamon or Cranberry

  • 6 Tbsp. unsweetened, shredded coconut

  • ¼ cup. (sprouted) seeds (try combos of: hemp, sunflower, pumpkin &/or flax )

  • ¼- ½ tsp. sea salt

  • 1 ¾ - 2 cups boiling water

Method

  1. Place all ingredients except water in high speed blender.

  2. Blend until a course flour consistency, 10 second button with Blendtec.

  3. Add water.

  4. Blend until fully incorporated followed by an additional 25-30 seconds, the “Smoothie” and “Whole Juice” settings work perfectly on the Blendtec.

  5. Pour into bowls.

  6. Top with additional seeds, dried fruit, applesauce or cinnamon, if using, as desired. Enjoy.

50/50 Base & Very Berry Porridge

Zego Mix-Ins Very Berry Porridge

Serves 4

Ingredients

  • 1 cup Zego Mix-Ins Cranberry

  • 6 Tbsp. unsweetened, shredded coconut

  • ¼ cup (sprouted) seeds (try combos of: hemp, sunflower, pumpkin &/or flax )

  • ¼- ½ tsp. sea salt

  • 1 ¾ - 2 cups boiling water

  • 2 cups (frozen) Blueberries*

Method

  1. Place all ingredients except water & blueberries in high speed blender.

  2. Blend until a course flour consistency, 10 second button with Blendtec.

  3. Add water.

  4. Blend until fully incorporated.

  5. *Add blueberries. Use the “Smoothie” setting on the Blendtec or blend until porridge is smooth & a bit frothy, approximately 45 seconds.

  6. Pour in bowls.

  7. Top with additional seeds or blueberries as desired. Enjoy!

 

            *50/50 Base & Very Berry Porridge option:

The Base Porridge is the bottom half of the bowl & the Very Berry Porridge (using 1 cup blueberries) is the center.

Method

  1. After blending the Base Porridge, pour half the porridge evenly divided into serving bowls.

  2. Add 1 cup blueberries to blender jar.

  3. Use the “Smoothie” setting on the Blendtec or blend until porridge is smooth & a bit frothy, approximately 45 seconds.

  4. Ladle into center of bowls to make inner ring.

  5. Top with additional seeds or blueberries as desired. Enjoy.
