Vanilla Cassava Waffle Cones

If you are an ice cream fan, chances are that you have enjoyed the chilly confection in many forms whether simply scooped into a bowl solo or with a variety of accompaniments such as hot fudge, sprinkles and whipped cream, as a popsicle, as an ice cream sandwhich or even in an ice cream cone.

For those who are Celiac and / or who have food allergies, the ice cream cone can be a challenge to enjoy without making it at home as one can see in the following list of ingredients of the “Original Drumstick” by a very large company:

Whey, Cone (Bleached Wheat Flour, Sugar, Vegetable Shortening [Palm Oil, Soybean Oil], Soy Lecithin, Salt), Cream, Peanuts, Sugar, Cone Coating (Coconut Oil, Sugar, Cocoa Powder, Partially Hydrogenated Soybean Oil, Soy Lecithin, Hydrogenated Palm Oil, Artificial Flavor), Skim Milk, Chocolatey Coating (Coconut Oil, Palm Oil, Sugar, Cocoa, Reduced Minerals Whey, Milk, Chocolate, Artificial Flavor, Soy Lecithin), Corn Syrup, Tapioca Maltodextrin, Natural and Artificial Flavor, Propylene Glycol Monostearate, Guar Gum, Monoglycerides, Sodium Carboxymethylcellulose, Carrageenan, Invert Sugar, Annatto Color, Salt.

Not only is the list rather long, but it also contains several top 9 allergens as well as corn and food additives. For those who prefer food in their close to natural state and who prefer their feed her children nutritious food, this frozen confection is also not a good option.

Rather than not share ice cream in a cone with my Mini-Foodies, I set out to make a lower sugar, allergy friendly vanilla waffle cone. The base of the cone is cassava flour and it does contain eggs. The coconut products can be substituted as noted below in the recipe. A perfect match for these cones is my Sweetened Condensed Coconut Milk Ice Cream as you can see in the photo below.

These waffle cones are versatile and I offer some suggetions below after the recipe.

If you are in need of a waffle cone maker, this is the one I use. I chose this one because of its decent reviews for my budget when I purchased it. I did take into account the reviews and knew that it would possibly cook the waffles with some color variation and I was okay with that as I feel that this gives the cones character. Some reviewers indicate their displeasure that this means that the waffles are unevenly cooked. The waffle is thin and the waffle iron heats well enough to fully cook the batter with the cook’s watchful eye. The one major drawback for a person who wishes to avoid non-stick coatings is that this particluar model does in fact have such a coating. I did look for a non-stick iron, but until this model is made into a waffle cone maker, the non-stick maker will do for the occasional treat.

Vanilla Cassava Waffle Cones

Ingredients

Method

  1. Whisk together cassava flour, baking powder & sea salt in a medium bowl to combine.

  2. Whisk together wet ingredients in a 2 or 4-cup glass measuring cup.

  3. Pour wet ingredients into dry ingredients stirring until incorporated.

  4. Warm waffle cone iron & follow manufacturer’s directions to cook waffles.

Notes:  - After shaping cones & when still warm, place 3-4 chocolate chips in the bottom so it melts creating a seal preventing ice cream dripping.

-For a Waffle Taco, bend cone in shape of a taco over a glass until it hardens. Fill with desired contents such as ice cream and toppings.

Chocolate Waffle Cone Variation

 Method

  1. Add cacao powder, maple syrup & additional vanilla to the dry & wet ingredients respectively & make waffle cones as directed above.

Not Just an Ice Cream Food

While this is a lovely waffle cone, it can also be enjoyed with other sweets or savory foods such as Waffle Tacos either with ice cream filling and toppings or as a vessel for pudding, fruit or savory fillings.

Another option is to keep the waffles flat & make Layered Dessert Sandwiches using a caramel, chocolate or nut / seed spread alone or with fruit.
